The salsa ferments for 3-5 days at room temperature, then is refrigerated. The practical case for fermented salsa is real: it stays good in the refrigerator for 4-8 weeks rather than the 3-5 days of fresh salsa, the flavor improves over the first 2 weeks of refrigeration as the lactic acid integrates, and the fermented version pairs differently with food.
